VEGETABLE BROTH

Ingredients

  • 8 cups of filtered water
  • 1 onion (quartered)
  • 2 carrots (diced)
  • 2 celery stalks (5cm)
  • 1 potato (peeled, diced)
  • 4 button mushrooms (sliced)
  • 1/2 tsp dried parsley powder
  • 1/8 cup fresh parsley

  • 2 garlics (peeled, minced, set aside for 10 minutes before use)
  • 1 bay leaf
  • 1 tsp dried thyme
  • 1 tsp salt
  • 6 peppercorns

How to make :

  • Bring to boil all the ingredients with low heat.
  • Cook about 45 minutes until all ingredients are soften.
  • Filter the broth. The remaining vegetables can be blend in a blender (optional for thicker broth).
  • Keep the vegetable broth in the refrigerator for use.
